• Dry Ingredients:
• 1 1/2 cups all-purpose flour
• 1/2 cup rolled oats
• 1 tsp baking soda
• 1/2 tsp baking powder
• 1/2 tsp salt
• 1/2 tsp cinnamon powder
• Wet Ingredients:
• 3 ripe bananas, mashed
• 1/2 cup honey
• 1/3 cup melted coconut oil or vegetable oil
• 2 large eggs, at room temperature
• 1 tsp vanilla extract
• 1/4 cup milk (dairy or non-dairy)
• Add-ins:
• 1/2 cup chopped walnuts
• Additional oats and chopped walnuts for topping (optional)
Instructions:
1. Prepare the Oven and Pan:
• Preheat your oven to 350°F (175°C).
• Grease a 9x5 inch loaf pan or line it with parchment paper.
2. Mix Dry Ingredients:
• In a large bowl, whisk together the flour, oats, baking soda, baking powder, salt, and cinnamon powder.
3. Mix Wet Ingredients:
• In another bowl, combine the mashed bananas, honey, melted coconut oil (or vegetable oil), eggs, vanilla extract, and milk. Mix well until all ingredients are thoroughly combined.
4. Combine Wet and Dry Ingredients:
• Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
5. Add Walnuts:
• Fold in the chopped walnuts.
6. Transfer to Pan:
• Pour the batter into the prepared loaf pan.
• Smooth the top with a spatula and sprinkle additional oats and chopped walnuts on top if desired.
7. Bake:
• Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
• If the top is browning too quickly, cover it loosely with aluminum foil during the last 10-15 minutes of baking.
8. Cool and Serve:
• Remove the bread from the oven and let it cool in the pan for about 10 minutes.
• Transfer the bread to a wire rack to cool completely before slicing.
