Khaman Dhokla Recipe

Ingredients:

  • 1 ½ cups gram flour (besan, approximately 180 grams)
  • 1 tablespoon semolina (rava, optional)
  • 1 tablespoon sugar
  • 1 ½ inches ginger (crushed to a fine paste)
  • 1 ½ teaspoons green chilies (chopped and crushed)
  • 3 pinches turmeric powder
  • 2 pinches asafoetida (hing)
  • 3 tablespoons oil (any neutral oil or peanut oil)
  • 2 teaspoons Eno (fruit salt, or 1/2 to 3/4 teaspoon baking soda)
  • 1 teaspoon salt (adjust as required)
  • 1 ½ tablespoons lemon juice (or 1/3 to 1/2 teaspoon pure food-grade citric acid)
  • 1 cup water (or add as required)
  • ⅓ cup water (for activating Eno)
    • For tempering:
    • 1 teaspoon mustard seeds
    • 1 teaspoon cumin seeds (optional)
    • 2 teaspoons white sesame seeds
    • 1 sprig curry leaves (about 10 to 12 leaves)
    • 1 teaspoon green chilies (chopped, optional)
    • 2 teaspoons sugar (adjust to taste)
    • 3 tablespoons coriander leaves (chopped)
    • 3 tablespoons fresh grated coconut (optional)

Instructions:

    • Prepare the Batter:
    • In a large mixing bowl, combine gram flour, semolina (if using), sugar, ginger paste, green chili paste, turmeric powder, asafoetida, oil, lemon juice, and salt.
    • Add 1 cup of water (or as needed) to make a smooth batter.
    • Steam the Batter:
    • Grease a steaming tray or a thali (plate) with oil.
    • Mix Eno (fruit salt) with ⅓ cup of water and add it to the batter. Mix gently.
    • Pour the batter into the greased tray and steam it for about 15-20 minutes or until a toothpick inserted comes out clean.
    • Prepare the Tempering:
    • Heat oil in a small pan. Add mustard seeds and let them splutter.
    • Add cumin seeds (if using), sesame seeds, and curry leaves. Sauté for a minute.
    • Turn off the heat and add green chilies, sugar, and salt. Mix well.
    • Assemble:
    • Once the dhokla is steamed, remove it from the tray and cut it into squares or diamonds.
    • Pour the tempering evenly over the dhokla.
    • Garnish with chopped coriander leaves and grated coconut.
    • Serve:
    • Serve warm with green chutney or red garlic chutney.
