Ingredients:
• For the Chicken:
• 4 boneless, skinless chicken breasts
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 tsp ground cumin
• 1 tsp smoked paprika
• 1/2 tsp salt
• 1/2 tsp black pepper
• Juice of 1 lime
• For the Cherry Salsa:
• 2 cups fresh cherries, pitted and chopped
• 1/2 red onion, finely chopped
• 1 jalapeño, seeded and finely chopped
• 1/4 cup fresh cilantro, chopped
• Juice of 1 lime
• Salt and pepper to taste
Instructions:
1. Marinate the Chicken:
• In a bowl, mix together the olive oil, minced garlic, ground cumin, smoked paprika, salt, pepper, and lime juice.
• Add the chicken breasts to the bowl and coat them evenly with the marinade.
• Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
2. Prepare the Cherry Salsa:
• In a medium bowl, combine the chopped cherries, red onion, jalapeño, cilantro, and lime juice.
• Season with salt and pepper to taste.
• Mix well and set aside. Let the flavors meld while you prepare the chicken.
3. Grill the Chicken:
• Preheat your grill to medium-high heat.
• Remove the chicken from the marinade and place it on the hot grill.
• Grill the chicken for 6-8 minutes per side, or until it is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
• Remove the chicken from the grill and let it rest for a few minutes.
4. Serve:
• Slice the grilled chicken breasts.
• Serve the chicken topped with a generous amount of fresh cherry salsa.
