GRILLED CHICKEN WITH FRESH CHERRY SALSA


Ingredients:


For the Chicken:

4 boneless, skinless chicken breasts

2 tbsp olive oil

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

Juice of 1 lime

For the Cherry Salsa:

2 cups fresh cherries, pitted and chopped

1/2 red onion, finely chopped

1 jalapeño, seeded and finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste


Instructions:


1. Marinate the Chicken:

In a bowl, mix together the olive oil, minced garlic, ground cumin, smoked paprika, salt, pepper, and lime juice.

Add the chicken breasts to the bowl and coat them evenly with the marinade.

Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

2. Prepare the Cherry Salsa:

In a medium bowl, combine the chopped cherries, red onion, jalapeño, cilantro, and lime juice.

Season with salt and pepper to taste.

Mix well and set aside. Let the flavors meld while you prepare the chicken.

3. Grill the Chicken:

Preheat your grill to medium-high heat.

Remove the chicken from the marinade and place it on the hot grill.

Grill the chicken for 6-8 minutes per side, or until it is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

Remove the chicken from the grill and let it rest for a few minutes.

4. Serve:

Slice the grilled chicken breasts.

Serve the chicken topped with a generous amount of fresh cherry salsa.
