Grilled Shrimp Nicoise Salad

Ingredients:

  • ½ pound grilled large shrimp (you can use 16-20 count)

  • 2 tomatoes
  • 3 hard-cooked eggs (peeled)
  • 4 ounces button mushrooms
  • 10 baby potatoes
  • 4 ounces olives of your choice
  • 4 ounces whole green beans
  • Fresh basil (chopped, for garnish)
  • Fresh Italian parsley (chopped, for garnish)
  • Optional: zucchini blossoms (for garnish)
  • Sea salt and ground black pepper
  • Extra-virgin olive oil and balsamic vinegar (to taste, or your favorite dressing)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the grilled shrimp and sauté for about 3 minutes, until just cooked through. Season with salt and pepper.
  3. Arrange the potatoes, green beans, shrimp, tomatoes, eggs, and olives on a serving plate.
  4. Garnish with fresh basil and parsley.
  5. Drizzle with olive oil and balsamic vinegar.
  6. Serve with warm bread if desired.
