Here's a simple and flavorful Sheet-Pan Sausage & Vegetables recipe:


### Ingredients:

- 1 pound Italian sausage (mild, hot, or sweet), sliced into 1-inch pieces

- 1 red bell pepper, sliced into strips

- 1 yellow bell pepper, sliced into strips

- 1 green bell pepper, sliced into strips

- 1 medium red onion, cut into wedges

- 1 medium zucchini, sliced into rounds

- 1 medium yellow squash, sliced into rounds

- 1 cup cherry tomatoes, halved

- 3 tablespoons olive oil

- 2 cloves garlic, minced

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- 1/2 teaspoon smoked paprika

- Salt and pepper to taste

- Fresh parsley, chopped (optional, for garnish)


### Instructions:


1. **Preheat Oven:**

   Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.


2. **Prepare Vegetables and Sausage:**

   Place the sliced sausage, bell peppers, red onion, zucchini, yellow squash, and cherry tomatoes in a large bowl.


3. **Season:**

   In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried basil, smoked paprika, salt, and pepper. Pour the seasoning mixture over the vegetables and sausage. Toss everything together until well coated.


4. **Arrange on Sheet Pan:**

   Spread the sausage and vegetable mixture evenly on the prepared baking sheet in a single layer.


5. **Bake:**

   Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly caramelized. Stir halfway through the cooking time to ensure even roasting.


6. **Serve:**

   Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley, if desired. Serve hot.
