Toast with Hummus, Tomato, and Boiled Egg


 Ingredients:


2 slices of whole-grain or sourdough bread

1/2 cup hummus (store-bought or homemade)

1 large tomato, sliced

2 large eggs

Salt and freshly ground black pepper, to taste

Fresh herbs (such as parsley, chives, or basil), chopped, for garnish

Olive oil (optional)


Instructions:


1. Boil the Eggs:

Place the eggs in a saucepan and cover with cold water.

Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let the eggs simmer for 9-12 minutes, depending on your desired level of doneness.

Transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs and slice them.

2. Toast the Bread:

While the eggs are cooling, toast the bread slices to your desired level of crispiness.

3. Assemble the Toast:

Spread a generous amount of hummus on each slice of toasted bread.

Arrange the tomato slices on top of the hummus.

Place the sliced boiled eggs over the tomato.

Season with salt and freshly ground black pepper to taste.

4. Garnish and Serve:

Drizzle a small amount of olive oil over the top, if desired.

Sprinkle with fresh herbs for added flavor and a pop of color.

Serve immediately.


Tips:


For extra flavor, you can rub a garlic clove on the toasted bread before spreading the hummus.

Add some avocado slices or a sprinkle of feta cheese for variation.

Use flavored hummus (such as roasted red pepper or garlic) to change up the taste.
